Fruit Crème Pie

Raw pie making is so easy. Try different fruits for a naturally sweet dessert. Enjoy savory versions, as you get more comfortable working with raw vegetables.

Pie Crust:
2 C pecans or walnuts, unsoaked
1 C dates or raisins, unsoaked (for a savory crust try spinach, sundried tomatoes, garlic and herbs instead of dates)
Pulse nuts of choice in your food processor until they break into small pieces, add the dates and pulse until the mixture sticks together. Press into pie pan, distribute the mixture evenly, and about 1/8th of an inch thin, chill in refrigerator, freeze, dehydrate, or enjoy as is for your immediate pleasure.

Filling:
You can fill the pie with any combination of fruit, fresh or frozen. Today we will enjoy a frozen fruit filling with a fresh sliced fruit topping. Follow the guidelines below for the frozen banana recipe. We will mix the following fresh frozen fruit.

10-12 frozen bananas
2 C frozen berries
1-2 C fresh sliced fruit of choice,
You need a juicer with a blank to make this sorbet; the Green Star or Champion does the trick. If you do not have a juicer with a blank rather than a screen, you can make a decent version in the food processor. See description below.

Choose organic bananas, when ripe, peel and lay on cookie sheet, freeze until solid. Use the blank on your juicer, rather than the screen. Taking one frozen banana at a time, push them quickly through your juicer before they begin to melt. If you are making pie, allow the ice cream to emerge directly into your piecrust. Combine bananas with other frozen berries or fruit for delicious variations. This is delicious served plain, with any number of toppings or sauces. You will discover the options are endless! Can be made in the cuisinart with diced up frozen bananas and other fruit. Pulse and puree until creamy, enjoy on the spot or put into serving bowls and freeze for a couple of hours. Fill your piecrust with the frozen banana, berry ice dream, layer it as you so choose, mixing the two fruits of a layer of each. Decoratively arrange the fresh sliced fruit on top of your pie, either serve on the spot or freeze for up to a month, serving as a frozen dessert.
