Easy Red Lentil Soup

Use organic ingredients if possible
 
Ingredients
2 onions, chopped
2 cloves garlic, minced
1 tsp fresh ginger, grated
6 C pure water or broth
3 C red lentils
1 lb tomatoes, diced
½ C carrots, diced
½ C celery, chopped
1 tsp garam masala
½ tsp cardamom
½ tsp cayenne pepper
1 tsp cumin
2 T extra virgin olive or coconut oil
sea salt to taste
Directions
In large pot sautée the onions, garlic and ginger in the oil for about 5 minutes. Add the water, beans, vegetables and spices. Bring to a boil for a few minutes, then simmer for 1 to 1-½ hours or until the lentils are soft. Purée half the soup in a food processor or blender. Return the puréed soup to the pot, stir, season to taste and enjoy!
