Baked Winter Squash

Add salad and this is a whole meal in itself.

Ingredients:
2 medium, winter squashes, such as acorn, delicata, butternut
2 C left over quinoa or brown rice
2 stalks chopped celery
1 onion, diced
6-8 shitake mushrooms, sliced
½ C chopped nuts, such as chestnuts or walnuts, or sunflower seeds
Nut milk to moisten
1 clove fresh garlic, pressed through a sieve
2 T extra virgin olive oil
sea salt & fresh ground pepper
savory herbs: sage, rosemary, parsley, and thyme

Directions:
Pre-heat oven to 350 degrees.
Halve the squash and scoop out the seeds (rinse and roast them for a delicious treat). Saute onion, celery and mushrooms in olive oil until tender; add to other dry ingredients. Moisten with nut milk. Taste, and correct seasoning. Fill the squash centers with stuffing. Bake for 30-45 minutes – until squash is fork tender.
