Apricot Buckwheat Granola

Ingredients:
6 C buckwheat soaked and sprouted
1 C walnuts, soaked 2-6 hours, drained & rinsed
1 C raisins, soaked, or unsoaked
¼ C goji berries (optional)
1-2 C chopped dry apricots
1 T lemon juice
3 T cinnamon

Place all ingredients in a large bowl; using your hands or large spoon, toss well. Set aside a few cups to enjoy as a fresh soft sweet cereal, before dehydrating.

Spread remaining mixture onto an unlined dehydrator screen. Dry at 145º for 3 hours, and then lower to 115º for 6-12 hours, depending on desired crunchiness.

Serve with you choice of nut milk, such freshly made almond milk.
